The Story of the Water Buffalo,
Mozzarella, and Pizza

Originating in India and travelling to the Middle East via Arab traders, the water buffalo captured the eye of crusaders who were impressed by their milk quality and yields. They attempted to migrate the water buffalo with them as the crusaders journeyed back home. The water buffalo found an ideal home in Campania where Italian culture welcomed the animals, creating the first mozzarella cheese from their creamy milk... Mozzarella di Bufala.

Fresh mozzarella found its place in the world in 1889 when Italian baker Raffael Esposito created a new culinary delight for King UmbertoI and Princess Margharita di Savoia. This combination was named Pizza Margherita in her honor.

The Journey of Exito Gourmet

In Naples, Italy, two friends from distant lands envisioned mesmerizing the Indian public with wonderful cheeses from Italy. The founding principle of their dream was a realization that the migration of buffalo from India resulted in the cheeses of Italy. They decided to return the "Flavor" and Exito Gourmet was born.

Going on a journey from the deserts of Rajasthan to the Mountains of the Himalayas, they decided to settle and take root in the milk rich state of Haryana, and with some journeymen, bring mozzarella back home.

Combining the Italian know-how with the finest Indian milk, from its most sacred of creatures, we are able to introduce the all-vegetarian Impero line of cheeses.
